I mentioned below that I spend time on the W Coast of MX. If you like mackeral (I do) you're likely to want ro recreate at home. I was walking through CMart and saw a nice fish, clear eyes and firm skin well iced.I got a neighboring shopper to translate that I wanted it filled. I can do iy but Ms 9 prefers it doen elsewhere..specially with 3x 4 legged competitors..:)

If I had loy of carcasses on head, I'd make a stock..but 1 fish is not worth the trouble.

As it was, I took the fillets, covered in rice vinegar and had a great meal in several hours.

Was it as good as fresh caugh from MX? NO ..Did the quality decline faster than MX? yes. But if you want to serbe at party of for an app and you lu like mackeral. it's a great option that shpuld be accessible to most of us.

If you don't like, its $3/lb. When Ms 9 said it smellls up the fridge, I gad an easy answer. Pitch it..:) PS, there are several mackarel. I't talking about the Sierra..a lomg, thin fish with a few small spots on the body. I thought I had a better pic but it's 3rd from the left..photo from Key West.
