Live and learn. I wanted to make a cream pie and thought I'd found a perfect use for some flavorful fresh pineapple. So in it went with cream cheese, yogurt, a bit of sugar and then folded with whipped cream. For a crust I combined almond meal and graham crumbs with butter and sugar, baked to a golden brown. The filling tasted great when I put it in the fridge yesterday. Today it was inedible, bitter as can be.
Yes, the bromelain enzyme in the fresh pineapple attacked the dairy proteins and turned the flavor. Won't do that again!
