Roasting with a DeBuyer Griddle / Plancha?

badgerboyng | Jun 8, 202009:25 PM     10

I recently purchased All About Roasting by Molly Stevens, and I've been seriously enjoying the results of my roasting endeavors. So far, I've been getting away with a $20 rimmed baking sheet from TJ Maxx that's pretty thick in combination with the searing power of my DeBuyer French Collection frying pan. However, I'd like to acquire a serious roasting pan. In the book, she continuously emphasizes the importance of using the shallowest pan you can get away with to increase air circulation and evenness. I'd also like a pan that I can sear/deglaze in throughout the roasting process. I usually only cook for 2-4 people, so roasting a whole turkey is not a concern of mine. The largest thing I'd roast is a pork shoulder.
I am a big fan of DeBuyer, and while they do not sell a roaster on their USA website, they do have a 10x15" griddle/plancha in the Mineral B line. This pan has sides that appear to be an inch or two tall with oversized aluminum handles that look exactly like what you'd find on a large roasting pan. I'm thinking that it could be a great pan for all around roasting and I could even use it on the stove top as a griddle too.
I have also seen posts about Demeyere's plancha, which heats far more evenly but it's $200 right now (in both 5 and 7 ply) and has very shallow sides, so I'm not sure that it would work well for roasting.
My questions are: Is the DeBuyer Mineral B griddle likely to work well as an all around roaster? Has anyone used a griddle/plancha as a roaster with good success? Or is it stuck in a somewhat useless place between basic aluminium sheet pans, oversized tri-ply rosters with high sides, and the highly priced demeyere plancha?
