Roasted Root Vegetables - make ahead?

I wanted to roast a few root vegetables (sweet potato, onions, celery root) the night before and heat them up to serve the next day. Will this turn out OK? Will something be "missing" or "lost" if I don't do them the day of - while my prime rib is cooking?
