(Roasted)/Beet Kvass

Im preparing to make a batch of beet kvass and i was wondering if roasting the beets would release more sugars to provide more foods for the SCOBY. I know Beets are a non-starchy vegetable but i was wondering if anyone could clarify this a bit more the effects of heating/roasting on sugars?
