do-ahead risotto?

Help! I'm doing a birthday dinner for 12 where one of the guest is allergic to wheat products (gluten) and potatoes. I thought a risotto might be a good alternative but I wondered if risottos can be done ahead of time so I can spend time with my guests. I've done a risotto once......Remainder of the menu is still in flux with the exception of asparagus vinagrette. Suggestions VERY welcome.
