What rec's do you have, and why, for your favorite Japanese (short grain white or short/medium grain brown) rice?
I've been eating koshihikari and hitomebore from several white rice vendors, including Tamaki. And I've been eating Nishiki and Kokuho brown rice.
White definitely is better. The Marlboro of rice. I'm still deciding between koshihikari and hitomebore. And I still have Opus to try, and the short-grained browns, and so on.
