Reservations on weekend Nights

We are nearing our trip to BC. We are from Central California do most of our fooding in SF/Bay area. We will be going to Vancouver, Whistler and Tofino. All of our days in Vancouver are weekend days. We have made reservations at Blue Water Cafe, but not sure if some of our other choices absolutely need reservations. We want to have some flexibility as we are in and out of Vancouver with trains, and ferries etc. We will not have a car but can walk for miles for good food and will use public trnsportation. Will do Richmond and Granville Island during day time.

Some of our choices based on reading this board for weeks. Just the two of us.

Kirin for dim sum, Sat or Sunday afternoon.

Maenam for a dinner.

Chambar for a dinner

Kingyo and maybe Guu with garlic, for Izakaya crawl

Refuel, Judas Goat, Cru, Bin 941/942 for a wine bar small plates experience.

So if any of these places would be next to impossible to get in on Fri, Sat or Sunday without a reservation fill me in. Also if you think more than a day or two in advance is needed.
