Redbones - going downhill or off night?

I've never been a huge fun of redbones, but it was convenient to the Real Ale fest, so we went there afterwards. I know the style at Redbones, not very smoked, and grilled with some sauce before serving, not what they would call BBQ in many locations, but it can still be enjoyable enough. However, they should have been embarassed at what they served. Between a couple of us, we had the St. Louis ribs which were totally dried out, the Memphis ribs, which were just OK, and the Arkansas ribs, which were really burnt on the outside and dry, tough and fatty on the inside. I would have sent them back, but I didn't want to spoil the mood of the big crowd I was with. Good corn pudding, though.

I guess I'm really spoiled after my recent trip to Texas... sigh
