Recipes using chocolate sandwich cookie crumbs

AuntieJen | Mar 24, 201806:31 AM     4

I have an unopened box of Trader Joe's Peppermint Joe-Joe's leftover from Christmas. (I know! Who doesn't eat them all at once?!!!) I'd like to use them to make mini tarts of Chocolate Mousse Pie with Joe-Joe's Crust using a mini-muffin pan. I don't want to use paper liners, so the little crusts need to release easily from the pan. Or, maybe I should use liners for easier handling. These will be for a large group (too dangerous to keep around the house!!!), so they need to be easy to handle and not fall apart in their laps.

Does anyone have any tips? Liners or no liners?

Many thanks!

This smooth, silky chocolate mousse pie has only two ingredients for the filling, and the crust is made out of crushed Trader Joe's Joe-Joe's cookies.
