Recipe from Trader Joe's with Beluga Lentils

Thanks to Trader Joe's for keeping me informed on new food stuff. I notice they are now even building in the cook's stations as they construct new locations. I remember when they just had a hob-nob makeshift in the corner of the stores as their tasting stations (such as the new Dos Lagos location).

Anyway, I really like a new recipe they offered. Really simple. Good for summer appetizer, or . . . . I am finding more ways to use it, but they had tasting on a fresh crostini.

Recipe:
Two packages of pre-cooked Beluga Lentils (yes, they look like caviar)
Half a 14.5 oz. container of Trader Joes' fresh Bruschetta Sauce (so, @ 7 oz.)
Half an 8 oz. package of Trader Joe's LIGHT Feta cheese (not as strong flavor as full fat)

Crumble in the Feta with the other ingredients and serve. A light, tasty snack on bread; a topping for sauted Tilapia; enter it into an omelette; top or fill a hard-cooked egg with it; or just a spoonful of snack.
