Does anyone have a recipe for Quebec City bagels? [moved from Quebec board]

My husband and I honeymooned in Quebec City in 1995 (and have been back once since), and aside from being my favorite city to visit, it has one of my favorite food discoveries -- finding the absolute perfect bagel. They were wonderful -- and I don't think we stuck with any one restaurant in particular). I remember them being mostly halved, buttered and grilled (I believe -- could be wrong about that) -- and chewy and wonderful. Flatter than the New York bagels I've seen (although I am definitely not an expert). I've read that there is a difference between New York bagels and Montreal bagels, but rarely do I see Quebec City mentioned. However, I have seen one article mentioning Quebec City as having their own bagels, so I wonder if they have a different style. And, if so, would anyone happen to have a recipe they would share with me? Thank you so much! Monica
