My family is having an open house for my Mom's 90th birthday.
I'm making the sandwich selections and thought something different would be profiteroles(med. size) with maybe crab, egg,chicken or mushroom salad. I'll also be making the standard sand. of ham and turkey on various types of breads and croisants. I'd like to make the profiteroles ahead so that I don't have so much to do last min.
Do any of you have a good recipe for the protieroles or filling or any other suggestions for sandwich type food? This party will be in Mom's church and have many of her older friends there, so we really have to stick to pretty basic foods. I'd love to have something different for them and impressive, but it can't be so different that they won't eat it. Also if any of you have tips re. how to keep things fresh and cold, that will also help me.
