An absolutely wonderful soup by Emeril, I've been making it for about 5 years now and it's still one of my favourites.
I personally add a smidge more white pepper, and instead of chopping bacon I just toss in a small bag of shredded bacon. Also I probably use a bit more leek than what he asks for.
My only complaints come from trying to follow two certain parts of the recipe.
1) He lists the potatos and leeks in weights and not a volume measurement, which is inconsistant with the rest of the listed ingrediants. Also since it varies a lot with how much cookable portion you get with each leek, simply giving us a weight isn't often going to cut it. I just grab 3 average sized leeks at the grocery store.
2) His suggested instructions for the assembly of the flavour bag are nonsensical.
Every single time I've made this soup I've given this method a shot, and everytime I just end up throwing the leek leaves away and making the flavour bag out of dental floss and a coffee filter(cheaper than buying cheesecloth). He doesn't make much of an effort telling you how to make the flavour bag, just tells you to do it, which is stupid of course.
Other than that, it's a really wonderful recipe, a must try experience for any soup lover in my opinion.
