Okay - Im going to braise pork cheeks and make sandwiches with them this weekend. Thinking Ill do some homemade slaw, spicey relish perhaps, mayo with siracha, etc. But Im throwing this out there to you guys to see if any can come up with a a winning combo for me:
I probably with braise with the standard celery, onion, garlic, stock - I may then crisp up the pork in cast iron before dropping on the bread? I could go with fish sauce, carrot, thai basil, etc. on the sandwhich? I could go provolone cheese and carmelized mushrooms? Im lost with possibilities. I need a thoughtful opinionated person to tell me what to make. Thanks!
