You all have seen this. I would appreciate the version that uses roasted? hot pepper flakes. How are these flakes cooked or browned or roasted before being put in the oil? This is my favorite Chinese condiment. What you see is from a local restaurant that makes it without swimming in oil.
How long does it take for the flakes in oil to be ready?
IOW I want to get roasted hot pepper flakes that have absorbed oil. The hot oil that one gets is secondary. I want a relatively "dry" product like the local place makes.
