"Meat bags". that sounds odd...Anyway, i purchased a roast at Whole Foods yesterday, and it needed to be tied. I asked the butcher if those ready-made "bags" were food safe (the recipe calls for long braising), and he assured me they were. When i got home i noticed that the "strings" were elastic. Duh. What else? Food safe? I wonder. So i retied the whole thing with cotton string. Now the butcher is a very nice, helpful fellow and i don't mean to disparage him, but what's the real deal with these net bags? They look nice, and are easy to use, but... Thanks very much.
