I was so, so aggravated on Saturday night. I had purchased 30 dollars worth of gorgeous jumbo shrimp, arugula, and radicchio, and was intent on making a lovely sidedish for my company of rigatoni with garlic and olive oil and the aformentioned sauteed ingredients. For whatever the reason whilst at Fairway, I chose to get a bag of Rao's rustic, lined rigatoni instead of my fave Del Verde or DeCecco. I had heard Rao's pasta was excellent and thought why not.
Anyway, I added it to my boiling salted water as I have done with every other pasta brand literally thousands of times ( we eat pasta everyday) and within minutes it had all come apart into what amounted to a pile of shreds. It looked like white ropa vieja :(
I was besides myself as I had no other pasta other than pastina and orzo in the house and not nearly enough,,,,
Any experiences like this? Any scientific reason for it?
