I'm planning to make the ramen recipe from Bon Appetit sept 2013 and I don't eat pork. I'm fine with the chicken necks/wings and will use veal shoulder for pork shoulder. I'm stuck on the spareribs though. I don't think beef short ribs would substitute well because the meat is so rich and dark - though I imagine the gelatin from the bones gives the broth an important quality. Can anyone suggest a substitution?
