Ragu, how to stop water coming out of the sauce?

Hey all;
I've got a recipe for a spicy pork ragu that I love, but when it sits for a bit (holding it hot on the stove) the water in the sauce tends to separate. Which can cause a lot of water in your pasta bowl. Any suggestions? I also make a pomodoro where the water doesn't separate. Is it the pork possibly? I use pork cushion in my ragu. Any help is greatly appreciated.
