Quintessential Seattle ingredients for visiting home cook

Visiting Seattle the first week of October in an airbnb home with a really nice kitchen. We enjoy cooking, and will probably do several dinners at the house during our visit.

I'd love some recommendations on essential Seattle items/ingredients that we should be sure to use in our at-home meals during the visit (e.g., charcuterie from Salumi). Just a few items of guidance below for our group, but otherwise we're pretty open to anything:

> Really looking forward to Seattle's seafood bounty -- any specific suggestions for items that especially capture Seattle would be welcomed!

> One member of our group is not a fan of any Asian or Indian cuisines, so we won't be making anything that would fall in those categories.

> We're not coffee drinkers (I know, wrong city for that!)
