The other night it was getting late and my husband wanted to go to Trader Joe's to pick up a sandwich for his lunch next day. We hadn't had dinner yet and I was looking for something quick.
I bought a bag of frozen corn. At home I sauteed some onions and garlic, added the corn and let it cook for a few minutes. I poured in about 4 cups of water, added a big Tbsp of chicken bouillon powder and a chopped chile en escabeche (from a can) I had in the freezer. I then added about half a cup of low fat Pavel's yogurt. and a quarter cup of half and half. Used the immersion blender, leaving some of the kernels in small pieces to give it some texture.
Served it with Acme Levain bread sliced, topped with sharp cheddar, chopped green onions and sliced tomatoes - broiled until melted and toasted.
This was a very nice supper and was very little work.
