Quick Question For A Defrosted, Vacuum-Sealed Pork Roast- How Long Would You Hold It?

Last Saturday, I defrosted a 4-bone pork roast, figuring I'd roast it Sunday.
That didn't happen- so now our week is slammed and I'm wondering if you would feel OK holding it, defrosted, not refrozen, in the fridge until Saturday?
I'm of the thought that I really want to roast it and serve it right away, rather than doing any of the cooking or braising (not the right cut, really) ahead of time.
