Okay, I posted the request for your best banana bread recipe, and now I realize what I really want is to learn how to make quick breads, esp. banana bread, achieve that "poofy" dome on top with the gorgeous wide crack running down its length.
The texture of the bread can be anything as long as it's not dry, I just want that huge dome. Oh, and I'm using a 9" pan and a convection oven (if both of these are a no-no, please tell me).
Basically I want to know what to tweak in a recipe to get that dome: more baking soda, baking powder instead of soda, use buttermilk, more egg, high then low temperature, or what.
