I just bought some salt cod for the first time from a Portuguese market. I think I have around 1.5-2 lbs. I'm thinking of using it for brandade and some sort of Portuguese prep (maybe a recipe from David Leite).
I'm not sure when I'm going to have the time to get to it though. It's been in my fridge since Thurs.; it's stored in its original plastic bag which is wrapped in a a paper bag.
Since salting is a form of preserving, I figure it should be fine in the fridge for another week or so if need be, but maybe I'm wrong. How long will it last in fridge and is it possible to freeze?
Any general tips for working w/ salt cod as well as any recipes and suggestions much appreciated!!
