Doing Intermittent Fasting and want to make bone broth as suggested. I made a whole chicken in the crockpot the other day and have a lot of fat/jiggly broth in the bottom of the pot. Do I want to use that for the broth? Do I throw it in the pot with the bones after I've roasted them a little?
As for beef bone broth: oddly enough, I haven't been able to find a grocery store to give me big bones and a local Publix gave me 2 lbs of marrow bones. Are those sufficient to make beef bone broth? Do I leave the marrow in while simmering? Why has it become so hard to find bones? (One Fresh Market butcher told me I could call the day ahead and they'd save bones for me in the morning. When I called the following week, I got 2 guys who acted like they NEVER give away/sell bones--calling two different locations.)
