Question re Suzanne Goin's Chestnut Stuffing

Hello, this year for T-Day I'm planning on making Suzanne Goin's chestnut & fennel stuffing from Sunday Suppers. This is my first time making the stuffing and this dish. The recipe in the book uses 1 pound of bread and says, I think, that it serves 6. I am wondering if I need to double it in order to serve 5 adults and 2 little kids plus have leftovers. I also notice that the recipe was reprinted in Food and Wine with slightly different proportions, 11/2 pounds of bread and claims to serve 12.

Anyway, I was hoping for guidance from somebody who has made this before. Which recipe should I use and should I scale it up in some way? Thanks!
