May I ask, do any of you Chowhounds have recommendations regarding a good place to buy fresh Parmigiano-Reggiano? Is there anyone who will cut a piece fresh from the wheel?
I can find it, but it's always pre-cut, wrapped, sometimes hard or stale, and I've always wondered if someone sells it fresh.
I'll go just about anywhere, but I live on the Near North Side. I'd welcome opinions from cheese lovers and people who enjoy cooking Italian things. Thanks.
