I do not like to waste food, so when we have some small quantities of leftovers, I make quesadillas.
The quesadillas are made in an old-fashioned cast iron skillet. To avoid flipping the quesadillas, 2 are made at the same time by filling half of a tortilla and folding over the unfilled half. The quesadillas are cooked on the stove top first and then finished under the broiler.
On Saturday, 27Jul13, there was part of a half chicken breast slathered with BBQ sauce in the fridge along with about 4 ounces of fresh chorizo in another container. Also, some homegrown green cayenne chiles and half of a medium onion were in the available.
The diced onion and minced chiles were sauteed in a non-stick skillet. When the onion was translucent, the onion and chiles were transferred to a small mixing bowl. In the same non-stick skillet, the fresh chorizo was sauteed and transferred to the small bowl. The chicken was minced and added. The contents of the bowl were allowed to cool before adding some grated cheese to the bowl as a binder and everything mixed together.
A thin coating of canola oil was applied to the 10.5" cast iron skillet. One 9" flour tortilla was place in the skillet and ingredient mixed filled half of it. A layer of grated cheese was added before folding the unfilled half of the tortilla over the filled half.
A second tortilla was placed in the exposed part of the skillet and over the filled tortilla. The procedure of filling half of the 2nd tortilla and folding over was done. Canola oil was brushed on the 2 tortillas. The skillet was place on the stove to lightly cook the bottoms of the quesadillas. Then the skillet was transferred to the oven under the broiler. The heat of the broiler cooked the quesadilla tops taking care not to let them get burned.
A pair of tongs were used to remove the quesadillas from the skillet to a cutting board. Each one of them was sliced into 3 wedges. They were delicious considering that this was the 1st time that these ingredients were combined as a CRAZY filling.
The reason that this post is entitled Quesadilla Loca is because of the ingredients involved. There was no recipe for this creation, just the intended use of small amounts of leftovers. As previously mentioned, I don't like to waste food.
