Can I quadruple these recipes?

italianyc84 | Mar 9, 201606:52 AM     6

I'm hosting 16 people for dinner on Saturday, and am planning on making Paul Prodhomme's Cajun meatloaf and Nigella's sweet potato mac and cheese (if you have not tried it, it is addictive!!)

I've made both of these recipes numerous times, but have never doubled or quadrupled it before. Does anyone see any reason why these won't translate well in larger quantities?

I'm planning on putting the meatloaf together the day before, then prepping the mac and cheese while the meatloaf cooks. Once the meatloaf is out of the oven, I'll tent it with foil and then bake the mac and cheese. Sound like a sound plan? A salad and good bread will round out the meal.
