At Delicias del Sur, they make Tostadas de Pata or Beef hoof tostadas which are incredible!!
Broken down, it's the hoof boiled until all the gelatin, collagen and meat are fork tender. This is taken off the bone and chopped and lightly pickled and chilled in an oregano laced vinaigrette. Here they freshly fry your tortilla for tostada rather than use pre made and spread it with excellent earthy refritos. This is topped with the bright, chilled pata pieces and cool shredded lettuce, onion and tomato enrichened with crema and cotija. This is truly a gastronomic sensation!
I was also given a wonderful 'sopita' if you will - a great example of the consomme style soups that precedes your main course in Mexico's Comida Corrida lunch Tradition.
