Found this on a veg recipe site and altered it a little. Measures are all to taste.

Pumpkin Salad

1 small sugar pumpkin, cubed and steamed (but still al dente)
1 small red onion, chopped
green beans, blanched and cut into 1-inch pieces
1 medium tomato, cubed
mustard seeds
olive oil
sesame oil
maple syrup
chili-garlic sauce
cider vinegar
cilantro
toasted pumpkin or sunflower seeds

1- Combine the pumpkin, tomato and beans in a non-reactive bowl.
2- In a skillet, heat olive oil and mustard seeds until seeds pop. Add onion and sauté until softened.
3- Add maple syrup, vinegar and chili-garlic sauce. Boil and reduce until syrupy. Remove from heat and add sesame oil (just a little, for flavour).
4- Pour over veggies. Marinate at least one hour.
5- Before serving, add seeds and cilantro.
