Pulled Pork BBQ

All this talk about Rib Run (and Holly's fabu site) got me in the mood for pork. Since the E A G L E S are about to kick off their season in a few minutes I felt inspired yesterday to do the easiest make ahead crock pot pork dish in the world. I found it on the internet, and unfortunately, cannot credit the author, however here it goes.

Take a hunk of pork I used Pork butt the first time and this time a Pork loin roast from Moyers at Reading Terminal. Stick it in the crock pot with 2 quartered onions and cover with water. Overnight on low. That's it. Take it out to a strainer in the sink. Pour the juices over the strainer (others would save the stock, I can't be bothered). Pick (removing bones and unwanted bits) and stir in your fav BBQ sauce and keep warm in the crock pot. So simple, so yummy. I'm serving the sandwiches with fresh Jersey Corn. GO EAGLES!!
