A recent Fooding discovery that I've known about for some time, without having ever found it worth reporting about. However, now that it's under the spotlights, here is a little excerpt from a conversation I heard there yesterday at lunch:

Chef: everybody eats raw beef?
Friend: I don't.
Chef: Why not?
Friend: ...
Chef: WHY NOT?
