Professor Salt, Por Favor: Chicharrones de Pollo

This morning at the *tianguis* (weekly street market for produce, fish, veggies, flowers, etc) I stopped at the chickenmonger to buy boneless breasts (4 huge ones for about $4USD) and asked about the *chicharrones de pollo* in the thread from a few days ago. He gave me a blank look and shook his head. "No, señora, no hay nada que se prepara así." ('No ma'm, there's nothing prepared like that.')

I pressed: "But not even from the little pieces of fat?" Another headshake no. I said, "Well, I told my friends I'd ask around, and who better to ask than the source of the best chicken?" He nodded a pleasant acknowledgement to the compliment and put my chicken breasts in a bag for me.

I'll ask around some more; my neighbors haven't been out this week to *comadrear* (yack among the women) on the sidewalk in the cool of the evening. Soon as I spot Angélica or Domitila I will grab them and give you an update.
