problem with lychee sorbet texture

I have made both lychee sorbet and lychee-coconut sorbet. The problem I had with both recipes is that the lychee maintained a soft consistency. Does anyone have a good recipe which yields a harder sorbet? When I scoop out the sorbet, I have a hard time getting a good shape since the sorbet falls apart.
