Last Christmas, I made a 6 bone Prime Rib that came out medium rare to rare throughout. (I used the sear first, low heat method which was great!) There were a few in many family who loudly complained about all the 'red'. This year, I've been asked to cook it more thoroughly. I love my family, but they really get on my nerves.
My question is - should I order a 7 rib and cut it in half and start cooking the medium well to well side first? Should I cook a different method that will ensure that the ends are medium well and the center is medium rare? Any suggestions welcome, I'd hate to ruin an expensive piece of meat.
