Pressure cooking - not gentle on food?

Hi everyone:

I'm considering buying a pressure cooker (I've read the reports/articles - Kuhn Rikon or Magefesa, although Perfect Plus is also looking good...).

My question is: Is pressure cooking "violent" on food? I just can't see how you can duplicate a loving, three-hour gentle simmer with 40 minutes of pressure cooking. Are the tastes/texture similar enough?
