Prepping jambalaya for a weeknight dinner

I want to have jambalaya for dinner one night this week, but my weeknighs have about 10 minutes of time that I can pay attention to food, since getting home means feeding and bed for my 8 month old. So I want to do as much of it in advance as possible, and wondering if I should make the whole thing and then reheat in the oven later in the week or prep it up to the point of adding the rice, and then have the simmer part happen when I'm ready to cook.

The oven is always a safer bet for me with cooking, because some nights she goes to be easily, others I might be rocking, consoling, nursing for the better part of an hour before I actually can get back to the kitchen. And of course this is all happening between 6:30 and 8, so if I start when she's done, then I don't eat till after nine (and my bedtime is 9:30).

Hubby works evenings, so it's just me and the baby and there are just so many nights of PB&J that a girl can take :)
