How to prepare fresh huitlacoche?

nooodles | Jun 4, 2006 09:08 PM

I just bought a few ears of sweet corn that have an especially large amount of corn fungus on the silks. Usually the fungus looks slimy and dirty, and I have no desire to eat them.

This time, however, the ears were especially fresh and the huitlacoche looks clean and dry. Can I just pick it off and use it in cooking? Do I need to rinse it in water?

Does anyone have a suggestion for a simple preparation (something really easy, like sauteeing with garlic)?
