How to pre-soak steel cut oats?

josemartinlopez | May 25, 202108:17 PM     15

I now have a lovely morning ritual where I take a 1 quart copper pot and boil oats, water and milk just for me. The little pot grows on you and takes just a couple of minutes to heat up to boil water in. I'm trying to perfect the ratio of milk/water so it doesn't come out too watery.

Recently, I switched to steel cut oats and am adjusting to the much longer cooking time needed to soften steel cut oats. I started with Harraways from New Zealand and they could be boiled in the pot after a few minutes.

However, I switched to Bob's Red Mill where the package recommends boiling for at least 30 minutes. This is fine for me, but the package recommends even longer boiling times if you want the oats to come out creamier (mushier?). In addition to boiling for at least 30 minutes, I am now putting a few spoonfuls of steel cut oats with milk in a small plastic container each morning, pre-soaking the oats for at least 24 hours. Pre-soaking the oats just overnight isn't enough given the nature of steel cut oats (and may be Bob's in particular).

Could I check what people do with their steel cut oats? I really like the texture of steel cut oats and like mine chewy but not overly creamy or mushy.
