I recently was reading about Pralus Chocolatier's artisinal chocolates and was intriqued to learn if these were any better than other more generic chocolate. I'm no expert, but I do know I dislike milk chocolate and really enjoy dark and bittersweet ones and they are supposed to excel in these.
I wanted to order their sample set - which was 6-8 (I don't remember) single varietal chocolates but they were sold out. Having already gotten the bug in me I ordered the only one available, "Fortisima" Criollo Trinitario 80% cacao, 50g bar.
This is like nothing I've ever experienced in chocolate. Calling it candy is incorrect, it's food. Deep flavor, kind of winey as it slips down your throat, not sugary at all, silky, kind of spicey and clean tasting, and not to be eaten in one sitting. This is chocolate to savor - not stuff your face with.
All I know is I can't wait to taste the rest of them. I'm bowled over by this product.
