Ok hounds, whats the deal? I eat A LOT of Chinese food. And I mean, A LOT. For the past 5 years or so my office has been 2 blocks or less from either Bostons Chinatown or Phillys Chinatown so, as a good hound, Ive gone to lunch almost every day trying to sniff out the best stuff. Well, Im leafing through Saveur magazine the other day (last months, not this months) and while reading a very informative article on potatoes I happen to notice a quick little note that says the Chinese are the NUMBER ONE CONSUMER AND NUMBER ONE PRODUCER OF POTATOES (statistic was not attributed, by the way). Guys. Come on. Potatoes? Why have I never seen a potato dish in a Chinese restaurant in my life (save Indo-Chinese places)? At least I dont think I have. Maybe theyre on the Chinese language menu.
Help me out hounds. My questions are obvious: What are some dishes? Why are they underrepresented on menus? Are they any good?
