Potato Croquette Problem

I started making Potato Croquettes after falling in love with them at a local Japanese restaurant. Things were going well with just using mash potatoes, forming a patty, and rolling in flour, egg, and finally panko - then deep frying.

Well all of a sudden after frying for 3-4 minutes until golden, some of the patties are losing their mash potatoes. Some of them have the panko shell but are partially hollow - what is going on?
