I've never made a pot roast before but want to give it a go. I know there are loads of recipes online. I'm looking at one from the foodtv.com website by Tyler Florence. I'm just wondering if there are any particular tricks or methods I should use to make sure the meat comes out tender, juicy, and all-cooked but not dry (don't care for any red or bloody juices). Also, any tricks for making the gravy/sauce? I realize this is sort of general. I once recall a program on TV on various kitchen tested, tried and true ways to make a pot roast but it was years and years ago. Thanks in advance!
