Pork Ribs & Beans, Slow Cooker

With barbecue becoming a phenomena in the USA nowadays, many people don't think of cooking ribs any other way than smoked, low and slow. My supermarket had St Louis cut spare ribs on sale ($2.99#) the other day so I picked up a small rack. I had things to do away from the house so I couldn't hang around monitoring a fire. The solution was braising them in a slow cooker. They came out great! Here's the recipe. It's not one you need to follow closely. I made it with things I (and most cooks) would have on hand.

Braised Spare Ribs, Slow Cooker

1 rack of pork ribs, either spare ribs or baby back ribs
1 large Onion (approx. 10 oz.) medium dice
4 cloves garlic, smashed
1 tsp. dried Oregano
½ tsp. dried Thyme
½ tsp. dried rosemary
2 cups Stock (whatever meat stock you have or base)
½ cup wine (optional)
2 Tbls. Red wine vinegar
14.5 oz. can Tomatoes (diced, crushed, puree) or I used marinara sauce
½# Beans, dry (Cannellini or Great Northern) soaked overnight

Dry rub ribs with black pepper and seasoned salt
You can let them rest up to 12 hours (I cooked them almost immediately)
Cut up ribs into two rib sections
Brown rib sections in fry pan (in animal fat if you have it or vegetable oil)
Add to slow cooker
In the same pan
Sauté onions, garlic, dry herbs
Add stock and wine (if using) & vinegar
Bring to polling boil and reduce a bit (approx... 10 minutes)
Add tomato product and bring back to a boil
Add to slow cooker
Add soaked beans
Cover & cook on low until beans are tender. Mine took about 4 hours.
When finished cooking skim excess fat and adjust seasoning adding salt & pepper if needed.
