Okay, I've worked through my disappointment with my milk-braised pork roast.
Phase 2 in the "healing process" (tee hee): What ITALIAN (for an Italian dinner) dishes can utilize tender pork meat? (have about 5 pounds of it).
The only thing I can think of is soup. Any recipes/suggestions would be VERY helpful :)
By the way, I also have the rather flavorful whole milk leftover...
