Pork Dishes

So over dinner last night, a group of us agreed that pork is decidedly under-appreciated and under-used. Beef gets all the fancy shmancy dishes and 90 zillion dollar a kilo hand massaged Kobe steaks, while chicken is the darling of the austere health and/or budget conscious set, as well as the recipient of zillions of sauces and stuffings, and lamb fills the slightly-but-not-too-exotic spot on the menu.

Delicious, wonderful pork on the other hand, which needs no fancy sauces or massages, but is tasty and wonderful with just a bit of salt or smoke tends to get short shrift on many menus. So now I'm wondering, high or low end, where are the best pork dishes in Toronto?
