I went to a food truck festival in Austin, TX and had pork belly tacos. A korean mexican fusion. They were really really good and im pretty sure a staple of food carts out west. I am trying to recreate those. Any one had any really good ones or any insight on a recipe? Thinking of braising and then grilling or roasting the pork belly in asian/mexican spices and making some sort of slaw to put on them. For those who have had them what was great about them and how were they sauced or topped? Any help appreciated.
