A. Was the Four Seasons known for their collection of Chateau d'Yquem Saurternes? The Pool has, listed on their dessert menu, nearly every vintage going back to 1901. They ask you to "please inquire" about bottles from before that date.

B. Bread service is back: warm mini baugettes that are replaced when they cool off. Whipped butter topped with a layer of salmon tartare that is replaced with the bread.

C. The whole fish (sea bass) that we had was completely deboned and filleted out of sight. Had the head appeared, there's just something about the room that discourages eyeball sucking. Not that the amazing staff would have raised an eyebrow; we just wouldn't have been comfortable ;)
